When I had our daughter, moms came in and out of our house with meals, treats, clothes– all the support. We have the most wonderful church community who loves and takes care of us. No one understands how much a home-cooked meal is appreciated like a new mother does. One of the things that a friend brought over that was unexpected was “energy balls”– rich and chewy from the oats and peanut butter. Something I could send my husband to the fridge for during these first few weeks of nursing. A great mi-day treat. I really thought they may be the best thing since sliced bread.
Naturally, I decided to make my own version, with a little more protein from the collagen peptides and organic ingredients I felt great about serving to my family!
Table of Contents
Ingredients
These peanut butter energy balls only have 5 easy ingredients!
1 Cup Peanut Butter – We like to use organic, all-natural peanut butter.
Tip: Once you have mixed your peanut butter together, store it in the fridge. It won’t separate!
2 1/2 Cups Oats – You can use quick-cooking oats, rolled oats, whatever you like. I just strongly recommend using an organic variety. Oats are notorious for using pesticides like glyphosate unless you choose an organic variety.
1/2 Cup Collagen Peptides – Choose a simple collagen made from beef (bovine). We like this one from Azure Standard.
You could also substitute this for a clean protein powder.
1/2 Cup Honey – This is a great opportunity to get local honey in your diet, which boosts your immune system and helps with seasonal allergies. God’s design for food supporting our bodies is so wonderful!
1/2 Cup Dark Chocolate Chips – Plenty of variations work here. Mini-chocolate chips, white chocolate chips, and semi-sweet chocolate chips would all be great in this recipe! These chocolate chips from are organic and sweetened with coconut sugar!

If your peanut butter was refrigerated… and the balls are hard to come together, let them come to room temperature or use the warmth from your hands.
If they seem too dry… add a little more peanut butter or honey until they incorporate well! Use a spoon or hand mixer to really mix the dough together.
If they seem too wet… add a little more oats or collagen peptides to the mixture.

FAQs
Is honey healthier than white sugar?
Honey is a healthy food! It is the only sugar source that has gone through no processing and is completely. Local honey is the best option. This podcast is quick, but goes into great detail about the benefits of honey!
Can I used soaked grains for this recipe?
Soaking grains makes them more easily digestible and reduces anti-nutrients like phytic acids that grains naturally contain, so eating soaked grains is important where possible. Sprouted oats would work well for this recipe!
